Fried Apple Almond Butter Oatmeal

Ingredients

Fried apples

  • 1 apple (Fiji variety)
  • 1 teaspoon coconut oil
  • 1/4 teaspoon cinnamon
  • pinch cardamom

Oatmeal

  • 1/3 cup gluten-free oats
  • 1 teaspoon chia seeds
  • 2/3 cup almond milk or other plant-based milk
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cardamom
  • pinch salt
  • 1-2 teaspoons maple syrup, to taste
  • 1 teaspoon almond butter
  • 1 tablespoon coconut yogurt, optional

Preparation

  1. Chop apple into bite sized cubes. Add to a frying pan with 1 teaspoon coconut oil and bring to medium-high heat. Sprinkle with cinnamon and cardamom and cook apples, stirring often until warmed and softened, approximately 5-10 minutes.

  2. In a saucepan add oats, chia seeds, almond milk, cinnamon, cardamom and pinch of salt. Whisk to combine. Bring to simmer and cook oats for 5-10 minutes, or until desired porridge consistency. Sweeten with maple syrup to taste.

  3. Pour oatmeal into bowl and top with fried apple. Add spoonful of almond butter, and a dollop of coconut yogurt if desired.

Notes

  1. This recipe is warm, creamy, nutty, and Fall spiced.
