Pumpkin Spice Oatmeal Bowl

Ingredients

Stove top oats

  • 1/2 cup gluten free oats
  • 1 tbsp chia seeds or 1 tbsp ground flax seeds (optional)
  • 2-3 tbsp pumpkin puree
  • 1/2-1 tsp pumpkin spice
  • a pinch of salt
  • 1 scoop protein powder
  • 1 cup milk of choice

Toppings

  • Caramelized banana
  • Roasted delicata squash
  • Chocolate chips
  • Almond butter
  • Cinnamon

Preparation

  1. Stir all ingredients for the stove top oats together in one pot.

  2. Bring to almost boil, then immediately reduce heat to simmer.

  3. Stir frequently until thick and creamy.

Toppings

  1. Caramelize banana slices in a pan until golden.

  2. Roast delicata squash slices in the oven until tender.

  3. Add chocolate chips, almond butter, and cinnamon on top of the oatmeal.

Notes

  1. Some ingredients like chia or flax seeds are optional and can be omitted.

  2. Feel free to double the batch for sharing or leftovers.
