Carrot Cake Oatmeal
Ingredients
- 1/2 cup old fashioned oats
- 1 1/4 cup non-dairy milk
- 1 tablespoon maple syrup
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- Pinch nutmeg
- Pinch salt
- 1 teaspoon molasses
- 1 teaspoon vanilla
- 1 cup shredded carrot
- 1 tablespoon chia seeds
- 1 tablespoon chopped pecans
Preparation
Put everything into a pot except the pecans and chia seeds.
Bring to a simmer and cook for 8 minutes while stirring occasionally.
Turn off heat and stir in chia seeds.
Fold in or top with pecans.
Serve with a spoonful of nut butter, raisins, and a drizzle of thinned cream cheese.
