Carrot Cake Oatmeal

Ingredients

  • 1/2 cup old fashioned oats
  • 1 1/4 cup non-dairy milk
  • 1 tablespoon maple syrup
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • Pinch nutmeg
  • Pinch salt
  • 1 teaspoon molasses
  • 1 teaspoon vanilla
  • 1 cup shredded carrot
  • 1 tablespoon chia seeds
  • 1 tablespoon chopped pecans

Preparation

  1. Put everything into a pot except the pecans and chia seeds.

  2. Bring to a simmer and cook for 8 minutes while stirring occasionally.

  3. Turn off heat and stir in chia seeds.

  4. Fold in or top with pecans.

  5. Serve with a spoonful of nut butter, raisins, and a drizzle of thinned cream cheese.
