Triple Choc Brownie Baked Oats

Ingredients

  • 2 ripe bananas
  • 2 tbsp chia seeds
  • 360ml plant-based milk
  • 2 tbsp maple syrup
  • 200g oats
  • 25g cacao powder
  • 1 tsp baking powder
  • A pinch of salt
  • 20g + 10g cacao nibs
  • 20g + 10g chocolate, chopped

Serving

  • coconut yoghurt
  • fruit
  • melted chocolate

Preparation

  1. Preheat the oven to 160°C fan/180°C and lightly grease an oven-proof dish approximately 20cm x 16cm or equivalent.

  2. Mash one banana in a large mixing bowl and chop the other banana into small pieces.

  3. Stir the chia seeds, plant-based milk, and maple syrup into the mashed banana.

  4. Add the oats, cacao powder, baking powder, and a pinch of salt, and stir to combine.

  5. Fold in the chopped banana and 20 grams each of cacao nibs and chocolate chips.

  6. Pour the mixture into the prepared dish, smooth the top, and sprinkle with the remaining 10 grams each of cacao nibs and chocolate chips. Bake for 30 minutes until firm to the touch.

  7. Allow to cool slightly before slicing into pieces.

Notes

  1. Serve with coconut yoghurt, fruit, and melted chocolate. Leftovers can be stored in the fridge in a sealed container for 2-3 days.
