Indulgent Triple Chocolate Brownie Baked Oats 🍫πŸ₯„

Ingredients

  • 2 ripe bananas
  • 2 tbsp chia seeds
  • 360ml plant-based milk
  • 2 tbsp maple syrup
  • 200g oats
  • 25g cacao powder
  • 1 tsp baking powder
  • A pinch of salt
  • 20g + 10g cacao nibs
  • 20g + 10g chocolate, chopped
  • To serve: coconut yogurt, fruit, melted chocolate

Preparation

  1. Preheat the oven to 160Fan/180Β°C and lightly grease an oven-proof dish (approx. 20cm x 16cm or equivalent).

  2. Mash 1 banana in a large mixing bowl. Chop the other banana into small pieces.

  3. To the mashed banana, add chia seeds, plant-based milk, and maple syrup. Stir in oats, cacao powder, baking powder, and a pinch of salt.

  4. Fold in the chopped banana, 20g each of cacao nibs and chocolate chips.

  5. Pour the mixture into the greased dish, smooth the top, and sprinkle the remaining 10g each of cacao nibs and chocolate chips over it. Bake for 30 minutes until firm to touch.

  6. Allow the baked oats to cool slightly before slicing into pieces. Serve warm or cold with berries and yogurt in your @coconutbowls. Leftovers can be stored in the fridge in a sealed container for 2-3 days.
