Quick Cinnamon Raisin Breakfast Cookies

Ingredients

  • 1 banana
  • 1/2 cup rolled oats
  • 2 tbsp steel cut oats
  • 1/2 tsp cinnamon
  • 1 tbsp chia seeds
  • 1/2 tsp vanilla extract
  • 2 tbsp raisins

Preparation

  1. Mash 1 banana in a small bowl.

  2. Add 1/2 cup rolled oats, 2 tbsp steel cut oats, 1/2 tsp cinnamon (or more), 1 tbsp chia seeds, and 1/2 tsp vanilla extract.

  3. Stir to combine, then mix in 2 tbsp raisins.

  4. Form into 3 cookies on a parchment-lined baking sheet.

  5. Bake at 350°F for 7-9 minutes.
