Quick Cinnamon Raisin Breakfast Cookies
Ingredients
- 1 banana
- 1/2 cup rolled oats
- 2 tbsp steel cut oats
- 1/2 tsp cinnamon
- 1 tbsp chia seeds
- 1/2 tsp vanilla extract
- 2 tbsp raisins
Preparation
Mash 1 banana in a small bowl.
Add 1/2 cup rolled oats, 2 tbsp steel cut oats, 1/2 tsp cinnamon (or more), 1 tbsp chia seeds, and 1/2 tsp vanilla extract.
Stir to combine, then mix in 2 tbsp raisins.
Form into 3 cookies on a parchment-lined baking sheet.
Bake at 350°F for 7-9 minutes.
