Double Chocolate Raspberry Baked Oatmeal

Ingredients

  • 2 cups old fashioned oats
  • 1.5 cups oatly or any plant-based milk
  • 2 teaspoons baking powder
  • 2 eggs
  • 1 tablespoon cinnamon
  • 2-3 tablespoons cocoa powder
  • 1/4 cup dark chocolate chips
  • 1 cup fresh raspberries (can use frozen)
  • 2 tablespoons honey or maple syrup

Toppings

  • nonfat Greek yogurt
  • honey
  • nut butter
  • cinnamon
  • fresh berries

Preparation

  1. Preheat oven to 400 degrees Fahrenheit.

  2. Grease a pan, such as an 8x8 inch pan.

  3. Beat the egg, then add milk, oats, and all dry ingredients.

  4. Stir in chocolate chips and raspberries.

  5. Bake for 30-40 minutes or until a cake tester comes out clean.

  6. Top with nonfat Greek yogurt, honey, nut butter, additional cinnamon, and fresh berries.
