Chocolate Pumpkin Bread
Ingredients
- 300 g pumpkin puree
- 1 egg
- 150 g brown sugar or other sweetener
- 100 g oil or melted butter of your choice
- 150 ml water
- 300 g wholegrain flour
- 10 g baking powder
- 5 g cinnamon
- 100 g dark chocolate, melted (85% cocoa)
Preparation
In a large bowl, beat the egg with the sugar.
Add the oil/butter to the egg mixture and combine well.
Mix in the pumpkin puree and water until well incorporated.
Add the pre-sieved flour, cinnamon, and baking powder; mix thoroughly.
Preheat the oven to 170°C. Line a banana bread pan with parchment paper.
Pour the mixture into the pan and spread it evenly.
Chop the dark chocolate and melt it in the microwave.
Pour the melted chocolate over the bread mixture and fold 1-2 times without fully mixing.
Use a stick to create marble designs on top.
Bake for 45 minutes to 1 hour, until fully cooked.
Remove from the oven and cool on a rack before enjoying.
