Vegan Blueberry Muffins

Ingredients

  • 2 cups spelt flour
  • 2 1/2 teaspoons baking powder
  • 1/4 tsp salt
  • 3/4 cup cane sugar
  • 1 cup plant milk
  • 1/3 cup canola oil
  • 1 1/2 – 2 cups fresh blueberries

Preparation

  1. Mix wet ingredients and dry ingredients in two separate bowls

  2. Now combine wet and dry ingredients and mix until a smooth texture is archived. Don’t overmix. Toss in the blueberries and fold them into the batter

  3. Fill each muffin lined hole with batter. Optionally, add a few blueberries on top. Place the muffins now in the oven and let them bake for approx 25 min 180 degrees
