Vegan Blueberry Muffins
Ingredients
- 2 cups spelt flour
- 2 1/2 teaspoons baking powder
- 1/4 tsp salt
- 3/4 cup cane sugar
- 1 cup plant milk
- 1/3 cup canola oil
- 1 1/2 – 2 cups fresh blueberries
Preparation
Mix wet ingredients and dry ingredients in two separate bowls
Now combine wet and dry ingredients and mix until a smooth texture is archived. Don’t overmix. Toss in the blueberries and fold them into the batter
Fill each muffin lined hole with batter. Optionally, add a few blueberries on top. Place the muffins now in the oven and let them bake for approx 25 min 180 degrees
