Vegan Baby Pancakes with Fresh Berries

Ingredients

  • 2 cups whole wheat flour or all purpose flour
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 cups plant milk (used oat milk)
  • 2 tsp apple cider vinegar
  • 2 tbsp flaxmeal
  • 1 tbsp melted coconut oil or vegan butter
  • 2 tbsp maple syrup
  • 2 tsp pure vanilla extract
  • Pinch of salt

Preparation

  1. Mix all the above ingredients in the blender or in the bowl and set aside for 5-10 minutes.

  2. Preheat your griddle.

  3. Melt 1 teaspoon vegan butter or coconut oil on the griddle and pour 1/3 cup of batter onto the pan to make your pancakes.

  4. Cook on both sides until golden brown, about 2-3 minutes.

Tips

  1. For an oil-free version, use a non-stick pan.

  2. Enjoy with pure maple syrup, fresh fruits, and coconut whip.

  3. Customize the batter by dividing it in half and adding 2 tablespoons of matcha powder to one part and 2 tablespoons of beet or pitaya powder to the other.
