Vegan Baby Pancakes with Fresh Berries
Ingredients
- 2 cups whole wheat flour or all purpose flour
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1 1/2 cups plant milk (used oat milk)
- 2 tsp apple cider vinegar
- 2 tbsp flaxmeal
- 1 tbsp melted coconut oil or vegan butter
- 2 tbsp maple syrup
- 2 tsp pure vanilla extract
- Pinch of salt
Preparation
Mix all the above ingredients in the blender or in the bowl and set aside for 5-10 minutes.
Preheat your griddle.
Melt 1 teaspoon vegan butter or coconut oil on the griddle and pour 1/3 cup of batter onto the pan to make your pancakes.
Cook on both sides until golden brown, about 2-3 minutes.
Tips
For an oil-free version, use a non-stick pan.
Enjoy with pure maple syrup, fresh fruits, and coconut whip.
Customize the batter by dividing it in half and adding 2 tablespoons of matcha powder to one part and 2 tablespoons of beet or pitaya powder to the other.
