Vegan Pumpkin Spice Waffles
Ingredients
Dry
- 1 and 2/3 cups organic all purpose flour
- 2 tbsp yellow corn meal
- 2 tbsp coconut sugar or brown sugar
- 1 tsp flax meal
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tbsp pumpkin spice mix or 1 tsp each of cinnamon, nutmeg and ginger
Wet
- 1 cup pumpkin purée
- 1 1/3 cups soy or almond milk
- 1 tsp pure vanilla extract
- 1/3 cup melted coconut oil or vegan butter
Preparation
Heat your waffle griddle.
Combine dry ingredients with wet ingredients until mixture is smooth.
Pour a couple of spoonfuls of batter inside the waffle maker.
Cook for a few minutes until waffles are crispy on both sides.
Repeat with the rest of the batter.
Serving suggestions
Serve the waffles hot with coconut whip, pure maple syrup, and persimmons or any other fruit.
