Peanut Butter Pumpkin Bread
Ingredients
- 1/2 cup olive oil
- 1/2 cup raw brown sugar
- 2 eggs/flax-seed eggs
- 1/3 cup yogurt of your choice
- 1 teaspoon vanilla bean paste
- 1 cup pumpkin purée
- 1/2 cup smooth peanut butter
- 2 tablespoons apple cider vinegar
- 1 cup all-purpose flour
- 1 cup whole-meal flour
- 1 teaspoon cinnamon
- 1 teaspoon mixed spice
- 1 teaspoon baking powder
- 1 teaspoon baking soda
Preparation
Preheat oven to 180C and grease a baking tin loaf.
In a mixing bowl using a hand electric mixer beat oil and sugar together.
Add in eggs or flax-eggs, one at a time and beat until combined.
Add in yogurt and vanilla, beat until combined.
Add in pumpkin purée, peanut butter and apple cider vinegar, beat until combined.
Add in both flours, spices, baking powder and baking soda, mix until just combined.
Transfer the batter into the prepared tin loaf.
Bake for 50 to 60 minutes until golden brown and a toothpick inserted into the centre comes out clean.
Allow 5 minutes to cool in the tin loaf before removing.
Cool completely on a rack.
