Vegan Gluten-Free Pumpkin Waffles

Ingredients

  • 2 cups cashew milk
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla
  • 1/4 cup pumpkin seed oil or avocado oil
  • 1/2 cup pumpkin purée
  • 1 cup buckwheat flour
  • 1 cup oat flour
  • 2 tablespoons ground flax
  • 1 heaping teaspoon pumpkin spice
  • 1/2 teaspoon fine salt
  • 1 tablespoon baking powder
  • 1/2 cup water

Preparation

  1. In a large measuring cup, measure out cashew milk, add apple cider vinegar, vanilla, pumpkin seed oil or avocado oil, and pumpkin purée, then whisk to combine.

  2. In a separate bowl, whisk together buckwheat flour, oat flour, ground flax, pumpkin spice, salt, and baking powder.

  3. Add the wet mixture to the dry ingredients and fold to combine, then add water.

  4. Preheat the waffle iron and spray it with nonstick coconut oil.

  5. Measure about 1 cup of batter and cook on the waffle iron until golden brown.

  6. Serve with maple syrup and optional pumpkin spice granola.

Notes

  1. The batter will be thick.
