Easy Lacy Vegan Crepes with Strawberries

Ingredients

  • 2 cups all-purpose wheat flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon coconut sugar or brown sugar
  • 1 tablespoon flax meal
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon pure vanilla extract
  • 1 tablespoon vegetable oil
  • 3 1/3 cups organic soy or oat milk

Preparation

  1. In a small bowl, mix flax meal, 1 cup of soy or oat milk and 1 tablespoon of apple cider vinegar and set aside

  2. In a separate large bowl, add flour, sugar, baking soda, baking powder, cornstarch, salt and mix to combine

  3. Add the flax meal mixture to the flour mixture slowly

  4. Then add the remaining 2 cups of oat or soy milk, oil, vanilla extract and mix the batter well to ensure there are no lumps

  5. The batter should be like soup consistency and add more oat milk if necessary

  6. Set the batter aside for 5 minutes

  7. Cook the crepes on a non-stick flat saucepan over medium to high heat

  8. Use an oil spray to coat the pan between each crepe

  9. Use a soup ladle to scoop the batter and thinly spread it all over the pan

  10. Cook for 3 minutes on each side

  11. Repeat until all batter is used

  12. Serve with your favorite toppings and enjoy
