Easy Vegan Gluten-Free Crepes
Ingredients
- 1 cup buckwheat flour
- 1 tablespoon flaxseed meal
- 1 3/4 cups oat milk
- A pinch of salt
- 1 tablespoon coconut oil
- 1 teaspoon vanilla extract
Toppings
- frozen berries
- coconut flakes
- chia seeds
Preparation
Mix all dry ingredients in a bowl and mix well.
Mix all wet ingredients in a separate bowl and add to the dry ingredients.
Mix until smooth batter.
Heat some oil in a frying pan.
Cook the crêpes for about 3 minutes per side until golden brown.
Roll them up, cook the frozen fruit with chia seeds and distribute over the pancakes.
