Easy Vegan Gluten-Free Crepes

Ingredients

  • 1 cup buckwheat flour
  • 1 tablespoon flaxseed meal
  • 1 3/4 cups oat milk
  • A pinch of salt
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla extract

Toppings

  • frozen berries
  • coconut flakes
  • chia seeds

Preparation

  1. Mix all dry ingredients in a bowl and mix well.

  2. Mix all wet ingredients in a separate bowl and add to the dry ingredients.

  3. Mix until smooth batter.

  4. Heat some oil in a frying pan.

  5. Cook the crêpes for about 3 minutes per side until golden brown.

  6. Roll them up, cook the frozen fruit with chia seeds and distribute over the pancakes.
