Vegan Gluten-Free Vanilla Crepes
Ingredients
- 1 cup buckwheat flour
- 1 tbsp flaxseed meal
- 1 3/4 cup oat milk
- A pinch of salt
- 1 tsp vanilla extract
- 1 tbsp coconut oil
Toppings
- frozen berries
- coconut flakes
- chia seeds
Preparation
Mix all dry ingredients in a bowl and stir well.
Mix all wet ingredients in a separate bowl and add to the dry ingredients.
Heat some oil in a pan.
Cook the crêpes for 3-4 minutes per side until golden brown.
Stack the crêpes, add toppings, and serve.
