Vegan Gluten-Free Vanilla Crepes

Ingredients

  • 1 cup buckwheat flour
  • 1 tbsp flaxseed meal
  • 1 3/4 cup oat milk
  • A pinch of salt
  • 1 tbsp coconut oil
  • 1 tsp vanilla extract

Toppings

  • frozen berries
  • coconut flakes
  • chia seeds

Preparation

  1. Mix all dry ingredients in a bowl and stir well.

  2. Mix all wet ingredients in a separate bowl and add to the dry ingredients.

  3. Heat some oil in a frying pan.

  4. Cook the crêpes for about 3-4 minutes per side until golden brown.

  5. Stack them, add toppings, and serve.

Notes

  1. Ready in 20 minutes.

  2. Very easy to make.
