Mango Raspberry Chia Pudding

Ingredients

  • 1 1/2 cups almond milk
  • 1 1/2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 6 tablespoons chia seeds
  • flesh from 1 fresh ripe mango
  • 1/2 cup fresh raspberries
  • 2 teaspoons maple syrup
  • salt

Preparation

  1. In a measuring jug or bowl, combine almond milk, maple syrup, salt, vanilla extract, and chia seeds. Stir well and leave to set in the fridge for 4-6 hours or overnight. Stir halfway through if desired.

  2. Once the pudding is ready, puree the flesh of the mango to form a simple coulis.

  3. Combine raspberries and maple syrup in a bowl and crush lightly with a fork to make a chunky mixture.

  4. Layer randomly just for a pretty effect.
