Peanut Butter and Raspberry Chia Pudding
Ingredients
- 1 cup unsweetened almond milk
- 1/2 cup half and half
- 2 tbsp maple syrup
- 3/4 tsp vanilla extract
- 1/2 cup mashed fresh raspberries
- 1/3 cup chia seeds
Toppings
- Fresh raspberries, to taste
- Peanut butter, for drizzling
Preparation
In a large mixing bowl, whisk together 1 cup unsweetened almond milk, 1/2 cup half and half, 2 tbsp maple syrup, 3/4 tsp vanilla extract and 1/2 cup mashed fresh raspberries.
Stir in 1/3 cup chia seeds, then stir every 1-2 minutes for 15 minutes until thickened.
Refrigerate at least 1 hour before serving with more fresh raspberries and a drizzle of your favorite peanut butter.
