creamy banana chia pudding
Ingredients
- 2 large ripe bananas
- 2 cups unsweetened coconut milk (or any other milk)
- 6 tbsp chia seeds
- 1 tsp vanilla extract
- 2 tbsp maple syrup (or extra to taste)
Preparation
Add the bananas to a medium bowl and mash with a fork
Stir in the remaining ingredients and mix well
Leave it to set for 20 minutes, stir again, then cover and pop in the fridge overnight
Serve for breakie with extra sliced bananas, a dollop of yogurt and drizzle of maple
