Matcha Latta Chia Pudding

Ingredients

  • 1/4 cup chia seeds
  • 3/4 cup homemade almond milk
  • 1/2 cup full-fat coconut milk
  • 1 tsp matcha powder
  • 1/2 tsp vanilla extract
  • 2 tbsp maple syrup

Preparation

  1. Whisk all the ingredients together in a bowl until well combined

  2. Place in the fridge for at least an hour before serving or if you have time, overnight

  3. Optionally top these chia puddings with some non-dairy yogurt and a sprinkle of matcha powder
