Blender Chia Pudding with Coconut and Almond Milk
Ingredients
- 1 cup full-fat coconut milk
- 1 cup almond milk
- 2 tbsp maple syrup
- Pinch of sea salt
- Optional: 2 scoops collagen (I used @sproutliving for vegan or @vitalproteins if not vegan)
- 1/2 cup chia seeds
Flavor add-ins
- 1 tsp vanilla extract for vanilla flavor
- 2 tbsp cacao powder for chocolate flavor
- 1 tsp matcha powder for matcha flavor
Preparation
In a blender combine the coconut milk, almond milk, maple syrup, salt, and collagen. Blend until combined.
Add the vanilla, cacao, or matcha powder and blend again.
Add the chia seeds and pulse them in. Pulse briefly every 1-2 minutes until the pudding starts to thicken and the seeds remain evenly distributed (3-4 pulses usually).
Transfer to a jar and refrigerate overnight.
Top and eat! Makes 2-3 servings.
