Delicious Matcha Chia Pudding with Berry Compote
Ingredients
- Chia seeds - 1/4 cup
- Coconut milk or any plant-based milk - 1 cup
- Matcha powder - 1 1/2 tsp
- Vanilla extract - 1 tsp
- Maple syrup - 1 tbsp
- Homemade berry compote - 2 tsp or use any berry jam
- Coconut whipped cream - 2 tbsp
- Coconut chips - handful
Preparation
In a big bowl, add chia seeds, coconut milk, maple syrup, vanilla extract, matcha powder and mix until it becomes translucent and fluffy in texture.
If you want to assemble like jars in the picture, don't add matcha in the first place. Once chia seeds are well fluffed up, transfer half the mixture to another bowl, mix matcha with a tiny bit of coconut milk, then add it into the mixture to get one plain and one matcha chia pudding.
Layer the chia pudding in the glass as seen in the picture, add berry compote, and finish on top with whipped coconut cream and serve.
