Golden Milk Chia Pudding
Ingredients
- 1/4 cup/60 grams of chia seeds
- 1 cup / 150 ml of coconut milk
- 2 tbsp. coconut yogurt
- 2 tbsp. maple syrup
- 1 mashed banana
- 1 tsp. turmeric
- 1/4 tsp. lemon zest
- 1 tsp. cinnamon
- 1/4 tsp. vanilla extract
Toppings
- berries
- dried fruit powder
- more maple syrup
- more cinnamon
Preparation
Combine chia seeds, coconut milk, mashed banana, maple syrup and vanilla extract in a mixing bowl and stir until all combined. Add a little bit more coconut milk if needed.
Add turmeric, cinnamon and lemon zest, and stir until chia pudding gets golden. You can also use a whisk to make it easier to combine.
Cover the bowl and place in the fridge for at least four hours, or overnight. It is highly recommended to let it sit overnight.
Remove from the fridge and transfer the chia pudding to two smaller bowls. Finish with coconut yogurt and berries on top and add more cinnamon and/or maple syrup if needed.
