Matcha Mint Chia Pudding Cups

Ingredients

  • 1/3 C chia seeds
  • 1 can full-fat coconut milk
  • 1 Tbsp matcha
  • 1 Tbsp maple syrup or agave
  • 1/2 tsp spirulina
  • 1 tsp vanilla extract
  • 1/2 tsp peppermint extract
  • Coconut yogurt for topping
  • Fresh berries

Preparation

  1. Combine all ingredients except yogurt and berries in a large bowl and whisk until completely mixed and starting to thicken.

  2. Divide into 3 jars and refrigerate for at least 30 minutes to set.

  3. Top with yogurt, berries and any other toppings.
