Matcha Mint Chia Pudding Cups
Ingredients
- 1/3 C chia seeds
- 1 can full-fat coconut milk
- 1 Tbsp matcha
- 1 Tbsp maple syrup or agave
- 1/2 tsp spirulina
- 1 tsp vanilla extract
- 1/2 tsp peppermint extract
- Coconut yogurt for topping
- Fresh berries
Preparation
Combine all ingredients except yogurt and berries in a large bowl and whisk until completely mixed and starting to thicken.
Divide into 3 jars and refrigerate for at least 30 minutes to set.
Top with yogurt, berries and any other toppings.
