Matcha Mint Chia Pudding Cups
Ingredients
- 1/3 c chia seeds
- 1 can full-fat coconut milk
- 1 tbsp matcha
- 1 tbsp raw honey
- 1/2 tsp spirulina (optional for extra green!)
- 1 tsp vanilla extract
- 1/2 tsp peppermint extract
- coconut yogurt for topping
- fresh berries (optional)
Preparation
Combine all ingredients except yogurt & berries in a large bowl and whisk until completely mixed and starting to thicken
Divide into 3 jars and refrigerate for at least 30 minutes to set
Top with yogurt, berries and any other toppings
Enjoy with a spoon
