Matcha Mint Chia Pudding Cups

Ingredients

  • 1/3 c chia seeds⁣⁣
  • 1 can full-fat coconut milk⁣⁣
  • 1 tbsp matcha⁣⁣
  • 1 tbsp raw honey⁣⁣
  • 1/2 tsp spirulina (optional for extra green!)⁣⁣
  • 1 tsp vanilla extract⁣⁣
  • 1/2 tsp peppermint extract⁣⁣
  • coconut yogurt for topping⁣⁣
  • fresh berries (optional)⁣⁣

Preparation

  1. Combine all ingredients except yogurt & berries in a large bowl and whisk until completely mixed and starting to thicken

  2. Divide into 3 jars and refrigerate for at least 30 minutes to set

  3. Top with yogurt, berries and any other toppings

  4. Enjoy with a spoon
