Lemon Curd and Coconut Matcha Chia Pudding

Ingredients

  • Lemon curd
  • matcha chia cups
  • In a small mixing bowl combine 120ml of full fat coconut milk
  • 120ml of oat milk
  • 1 tbsp of maple syrup
  • 1 tsp of matcha powder
  • 3 tbsp of chia seeds

Preparation

  1. Whisk until well combined and place in the fridge for 1 hour

  2. To a blender add 250ml of full fat coconut milk, juice of 1 large lemon

  3. Tbsp of lemon zest, 1 tbsp of corn starch, 60ml of maple syrup and half tsp of agar agar

  4. Blend shortly, until well combined. Pour into a saucepan and bring to a simmer, whisking frequently

  5. Cook for 30 seconds, remove from heat and let cool to room temperature. Come back and whisk from time to time in order to accelerate cooling process and avoid any lumps from forming

  6. Divide lemon curd between 2 or 3 cups (depending on size) and refrigerate for at least 30 minutes. Add chia layer and serve, or refrigerate before serving.
