Tiramisu Chia Pudding

Ingredients

  • 1 cup almond milk
  • 4 tbsp chia seeds
  • 1/2 cup coconut yogurt or other plant based yoghurt
  • 2 tbsp maple syrup
  • 1/4 tsp vanilla paste
  • 1 tbsp cocoa powder
  • 1 tbsp strong coffee

Preparation

  1. Start by mixing the chia seeds and almond milk, let sit 1 min then mix well again

  2. Add the yoghurt and maple syrap and mix well

  3. Divide the pudding in 3 bowls

  4. In the first bowl, mix the cocoa powder with 2 tbsp of the chia pudding to remove any lumps

  5. Then add the cocoa mixture to the bowl and stir well

  6. In the second bowl, stir in the coffee and 1 tbsp of the chocolate chia pudding for color

  7. In the third bowl, stir in the vanilla

  8. Cover all the bowls and place in the fridge for at least 4 hours or preferably over night until it thickens

  9. For serving, layer the pudding in two glasses

  10. Top with exta yoghurt, a dusting of cocoa povder and some shaved dark chocolate
