Creamy Vegan Lemon Chia Overnight Oats

Ingredients

  • 1/2 cup rolled oats
  • 1/2 cup almond milk
  • 1/2 cup coconut yogurt
  • 1 tablespoon fresh squeezed lemon juice
  • 1 tsp lemon zest
  • 2 tsp chia seeds
  • 1 tablespoon vanilla protein powder
  • 1–2 tsp maple syrup

Preparation

  1. In a mixing bowl, combine the rolled oats, almond milk, coconut yogurt, fresh lemon juice, lemon zest, chia seeds, and vanilla protein powder.

  2. Stir the mixture well until all the ingredients are thoroughly combined.

  3. Drizzle in 1-2 teaspoons of maple syrup, adjusting the sweetness to your taste preference. Mix again to incorporate.

  4. Cover the bowl with plastic wrap or a lid and refrigerate it overnight or for at least 4 hours, allowing the flavors to meld and the oats to soften.
