Banoffee Pie Chia Pudding
Ingredients
- chia pudding:
- 1/4 cup chia seeds
- 1 cup almond milk
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- caramel sauce:
- 2 tbsp coconut oil
- 3 tbsp maple syrup
- 2 tbsp tahini
- 1/2 tsp vanilla extract
- 1/2 cup plant-based yogurt of choice (i use coconut yogurt)
- 1 banana, chopped
Preparation
Make the chia pudding: mix all the chia pudding ingredients together in a bowl
Place in the fridge for an hour or overnight to gel
Prepare the caramel: mix all the caramel ingredients together in a small pot on medium heat
Mix until everything is incorporated
Putting it all together: layer the chia pudding, yogurt, caramel and banana in a cup or jar and enjoy!
