Overnight Oats and Chia Pudding Parfait

Ingredients

Overnight oats layer

  • 45 g fine oat flakes
  • 1 tsp blue spirulina powder
  • 1/2 tsp vanilla extract
  • sweetener of choice (e.g. vanilla flavour drops)
  • 100 ml plant-based milk

Chia pudding layer

  • 2 tbsp chia seeds
  • 8 tbsp plant-based milk
  • 1/2 tsp blue spirulina powder
  • sweetener of choice (e.g. vanilla flavour drops)

Parfait assembly

  • coconut yogurt
  • berries

Preparation

  1. Add all ingredients for the overnight oats layer into a jar, mix well, and let it sit in the fridge overnight or for a few hours.

  2. Add all ingredients for the chia pudding layer into a jar, mix well, and let it sit in the fridge overnight or for a few hours.

  3. To assemble the parfait, layer the overnight oats with the chia pudding, add some coconut yogurt and berries.
