Spring Oats and Chia Pudding with Raspberries

Ingredients

  • 1/2 cup oats
  • 2 cups soy milk
  • 3 tablespoons chia seeds
  • 1/3 cup raspberries (few for decorating)
  • maple syrup to taste
  • 1 cinnamon stick
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut cream

Preparation

  1. In a pan, add oats, cinnamon stick, raspberries, and 1 cup soy milk. Boil and cook until done. Add water or more milk if desired for consistency.

  2. Add maple syrup and mix well.

  3. For chia pudding, add chia seeds in a bowl with the remaining cup of soy milk and maple syrup, mix until combined and fluffy.

  4. Layer in glasses and top with whipped coconut cream. Enjoy.
