Spring Oats and Chia Pudding with Raspberries
Ingredients
- 1/2 cup oats
- 2 cups soy milk
- 3 tablespoons chia seeds
- 1/3 cup raspberries (few for decorating)
- maple syrup to taste
- 1 cinnamon stick
- 1 teaspoon vanilla extract
- 1/2 cup coconut cream
Preparation
In a pan, add oats, cinnamon stick, raspberries, and 1 cup soy milk. Boil and cook until done. Add water or more milk if desired for consistency.
Add maple syrup and mix well.
For chia pudding, add chia seeds in a bowl with the remaining cup of soy milk and maple syrup, mix until combined and fluffy.
Layer in glasses and top with whipped coconut cream. Enjoy.
