BlackBerry Chia Pudding with Cherry Compote
Ingredients
Chia pudding
- 3 tbsp chia seeds
- 1/2 cup soy milk
- 2 tsp maple syrup
- 2 tsp blackberry powder
Cherry compote
- 1 cup frozen cherries
- 2 tbsp chia seeds
- 1 tsp vanilla extract
- 2 star anise
- 3 tsp maple syrup
- 2 tbsp coconut sugar
- 1 tsp coconut oil
Coconut whipped cream
- 1 tin coconut cream
- 1 tsp vanilla extract
Preparation
Mix all chia pudding ingredients together in a bowl until combined and chia seeds are fluffy in texture.
Stir continuously to avoid lumps.
Refrigerate the chia pudding until the compote is prepared.
For cherry compote, place cherries in a pan on medium heat with all ingredients except chia seeds.
Cook for a few minutes until cherries soften, then mash them.
Add chia seeds and mix well until done.
Cook for 1 more minute, then let it cool until coconut whipped cream is prepared.
For coconut whipped cream, whip coconut cream until it has a nice and fluffy texture.
Refrigerate the whipped cream until ready to assemble.
Assemble the breakfast bowl or jars with chia pudding, cherry compote, and coconut whipped cream.
