BlackBerry Chia Pudding with Cherry Compote

Ingredients

Chia pudding

  • 3 tbsp chia seeds
  • 1/2 cup soy milk
  • 2 tsp maple syrup
  • 2 tsp blackberry powder

Cherry compote

  • 1 cup frozen cherries
  • 2 tbsp chia seeds
  • 1 tsp vanilla extract
  • 2 star anise
  • 3 tsp maple syrup
  • 2 tbsp coconut sugar
  • 1 tsp coconut oil

Coconut whipped cream

  • 1 tin coconut cream
  • 1 tsp vanilla extract

Preparation

  1. Mix all chia pudding ingredients together in a bowl until combined and chia seeds are fluffy in texture.

  2. Stir continuously to avoid lumps.

  3. Refrigerate the chia pudding until the compote is prepared.

  4. For cherry compote, place cherries in a pan on medium heat with all ingredients except chia seeds.

  5. Cook for a few minutes until cherries soften, then mash them.

  6. Add chia seeds and mix well until done.

  7. Cook for 1 more minute, then let it cool until coconut whipped cream is prepared.

  8. For coconut whipped cream, whip coconut cream until it has a nice and fluffy texture.

  9. Refrigerate the whipped cream until ready to assemble.

  10. Assemble the breakfast bowl or jars with chia pudding, cherry compote, and coconut whipped cream.
