Chia Pudding with Kiwifruit Puree

Ingredients

  • 3 tablespoons chia seeds
  • 1/2 cup soy milk
  • 1/2 cup almond milk or coconut milk
  • 2 kiwifruit
  • 1/4 cup orange juice
  • 1 persimmon
  • 1 teaspoon raw agave

Preparation

  1. Crush and puree 2 kiwifruit to make puree.

  2. Blend 1 persimmon in a blender to make puree.

  3. In a bowl, mix all ingredients together including the fruit purees.

  4. Stir well and let the mixture sit for at least 30 minutes or refrigerate until thickened.
