Beetroot Infused Chia Pudding Breakfast
Ingredients
- 4 tbsp chia seeds
- 1/2 cup coconut milk
- 1/2 cup soy milk
- 2 tsp raw agave
- 2 tsp beetroot powder
- 1 tsp vanilla extract
Preparation
In a bowl, mix half of the chia seeds with soy milk, coconut milk, and vanilla extract, stirring continuously until it becomes fluffy and translucent in texture.
In a separate bowl, mix the remaining half of the chia seeds with beetroot powder, raw agave, and both milks, mixing well until fluffy in texture.
Layer the mixtures in glasses as shown, and top with your favorite toppings like fresh fruits and granola.
For this version, top with fresh coconut cream and maple syrup.
