Delicious Chia Pudding with Kiwifruit and Yogurt
Ingredients
- 1/4 cup chia seeds
- 1.5 cups soy milk or any plant-based milk
- 2 tablespoons maple syrup or raw agave
- 1 cup plant-based yogurt or any flavored yogurt
- 3 golden kiwifruit
- 1 teaspoon vanilla extract
- 2 tablespoons oats
Preparation
Soak chia seeds and oats in a bowl with soy milk, maple syrup, vanilla extract, and mix well until combined. Leave it overnight covered.
For serving, layer the chia pudding in the bottom of serving glasses, then add a layer of plant-based yogurt, and top with pureed kiwifruit.
To prepare the kiwifruit, scoop out the flesh and blend it to form a puree, or muddle it with a muddler.
Golden kiwifruit is sweet, so no additional sweetener is needed. If using unflavored yogurt, add a little sweetener to taste if desired. If the chia pudding is too thick, add some milk to adjust consistency.
