Ombre Pitaya Chia Pudding
Ingredients
- 1/2 cup full fat coconut milk
- 1/2 cup almond milk
- 1/4 cup chia seeds
- 1 tsp maple syrup
- 1 tsp vanilla extract
- Pinch of salt
- @popjoy pink pitaya powder
- @emmysorganics vanilla bean cookies
Preparation
Combine everything except the pitaya powder in the blender.
Blend briefly to mix.
Pulse every few minutes until chia seeds remain evenly distributed.
Take out 1/4 cup for the first layer.
Add a little bit of pitaya powder to make it light pink, then take out 1/4 cup for the second layer and repeat until you have four layers getting darker each time.
