Pumpkin Spice Chia Pudding

Ingredients

  • 1 cup almond milk
  • 1 cup full fat coconut milk
  • 2 tbsp maple syrup (or a couple dates)
  • 1/3 cup pumpkin puree
  • 1/2 cup chia seeds
  • 1 tsp pumpkin pie spice
  • 1 tsp vanilla
  • pinch of salt
  • optional: 2 scoops collagen

Preparation

  1. Blend everything except the chia seeds until combined

  2. Add the chia and blend briefly to combine

  3. Pulse every 2-3 minutes until the chia seeds stay evenly mixed and don’t settle to the bottom

  4. Refrigerate overnight

  5. Top with yogurt and eat
