Pumpkin Pie Chia Pudding

Ingredients

  • 1 cup full fat coconut milk
  • 1 cup almond milk
  • 2 tbsp maple syrup (or a few dates)
  • 1/3 cup pumpkin puree
  • 1/2 cup chia seeds
  • 1 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • pinch of salt
  • optional: 2 scoops collagen peptides

Preparation

  1. Blend everything except the chia seeds

  2. Add the chia

  3. Blend briefly to combine

  4. Pulse every 2-3 minutes until the chia seeds stay evenly mixed and don’t settle to the bottom

  5. Pour into a jar and refrigerate overnight

  6. Top with coyo and eat
