Easy Chia Pudding with Avocado Mousse
Ingredients
- 3 tbsp chia seeds
- 1.5 cups soy milk
- 2 tbsp maple syrup
- handful raspberries
- 1 tsp vanilla extract
Chocolate mousse
- 2 ripe avocados
- 2 tbsp raw cacao powder
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1/2 banana
Preparation
Mix all chia pudding ingredients together until fluffy in texture and keep it a little thick in consistency. You can pre-make and store in the fridge.
For chocolate mousse, blend all ingredients together until a creamy texture is achieved.
In serving glasses or bowls, add the chia pudding and top with avocado mousse, then enjoy with any fresh fruits.
