Easy Chia Pudding with Avocado Mousse

Ingredients

  • 3 tbsp chia seeds
  • 1.5 cups soy milk
  • 2 tbsp maple syrup
  • handful raspberries
  • 1 tsp vanilla extract

Chocolate mousse

  • 2 ripe avocados
  • 2 tbsp raw cacao powder
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 banana

Preparation

  1. Mix all chia pudding ingredients together until fluffy in texture and keep it a little thick in consistency. You can pre-make and store in the fridge.

  2. For chocolate mousse, blend all ingredients together until a creamy texture is achieved.

  3. In serving glasses or bowls, add the chia pudding and top with avocado mousse, then enjoy with any fresh fruits.
