Healthy Chia-Avocado Parfait Dessert

Ingredients

Chia pudding

  • 2 cups plant milk
  • 1/2 cup chia seeds
  • 1/2 teaspoon vanilla extract
  • 1/4 cup maple syrup

Avocado layer

  • Few drops coconut water (chilled)
  • 2 ripe avocados
  • 2 tablespoons agave nectar
  • 1 teaspoon fresh lime juice
  • Homemade granola mix for garnishing

Preparation

  1. Combine plant milk, vanilla extract, and maple syrup in a blender and pulse until smooth.

  2. Add the chia seeds and mix well.

  3. Transfer the mixture to a glass container.

  4. Let the mixture set for 4 hours or overnight.

  5. Stir the mixture several times during the first hour to ensure even setting and creaminess.

  6. Place all avocado layer ingredients in a blender and pulse until creamy.

  7. Assemble the parfait by pouring the avocado layer first, then the chia pudding.

  8. Add additional layers if there is room.

  9. Top with homemade granola.
