Mango Chia Pudding

Ingredients

  • 1 bag frozen mango, about 1 lb
  • 1/4 cup chia seeds
  • 3/4 cup plant milk
  • 1/4 cup plant based yogurt, or more plant milk
  • 1-2 Tbsp maple syrup

Preparation

  1. Take mango from the freezer and thaw overnight

  2. Whisk all remaining ingredients together in a medium bowl and let set overnight

  3. In the morning puree thawed mango and divide between 4 small jars. Add chia pudding on top
