Berry Coconut Chia Popsicles
Ingredients
- 1 14-oz can full-fat coconut milk
- 1/2 cup blueberries, pureed
- 1/4 cup chia seeds
- 3 tbsp maple syrup, or to taste
- 1-2 tbsp maqui berry powder
Preparation
Puree the blueberries until smooth if not already done.
In a bowl, combine all ingredients and mix thoroughly.
Pour the mixture into popsicle molds.
Insert sticks and freeze for at least 4-6 hours or until solid.
