Berry Coconut Chia Popsicles

Ingredients

  • 1 14-oz can full-fat coconut milk
  • 1/2 cup blueberries, pureed
  • 1/4 cup chia seeds
  • 3 tbsp maple syrup, or to taste
  • 1-2 tbsp maqui berry powder

Preparation

  1. Puree the blueberries until smooth if not already done.

  2. In a bowl, combine all ingredients and mix thoroughly.

  3. Pour the mixture into popsicle molds.

  4. Insert sticks and freeze for at least 4-6 hours or until solid.
