Easy Chia Seed Pudding

Ingredients

  • 2 heaping tbsp (30g) chia seeds
  • 1 cup (240 ml) almond milk
  • 2 tsp (10 ml) maple syrup (or sweetener of choice)

Toppings

  • fresh fruits of choice (e.g., berries)

Preparation

  1. In a bowl, combine chia seeds and almond milk. Whisk together with a fork, then wait a couple of minutes and whisk again to prevent clumping. Add maple syrup and whisk again to combine.

  2. Cover and transfer to the fridge. Allow chia seeds to absorb the liquid for at least 10 minutes or until thick pudding consistency. For best results, refrigerate overnight. When ready to eat, remove from fridge, top with favorite fruits, and enjoy.
