Tiramisu Mocha Chia Pudding

Ingredients

  • 85 g / 1/2 cup chia seeds
  • 250 ml / 1 cup + 1 tbsp almond milk
  • 2 tbsp maple syrup or other sweetener
  • 1/2 tsp vanilla extract
  • 1 tbsp cocoa powder
  • 2-3 tbsp strong black coffee
  • 1/2 cup coconut yoghurt

Optional

  • dark chocolate or mokka beans

Preparation

  1. Mix the chia seeds with almond milk, maple syrup, and vanilla extract.

  2. Place the mixture in a covered container and refrigerate overnight.

  3. The next morning, remove from the refrigerator and divide the mixture into three parts.

  4. Mix one part with the cocoa powder and another part with the coffee.

  5. Layer in glasses: first the chocolate layer, then the coffee layer, and finally the plain layer.

  6. Top with coconut yoghurt, cocoa powder, and/or chocolate and enjoy.
