Lemon Poppyseed Protein Pancakes
Ingredients
- 1 banana, mashed
- 1 cup buckwheat flour
- 1 scoop vegan protein
- 1 cup almond milk
- Juice of 1/2 lemon
- 2 tsp. baking powder
- 1/2 tsp. vanilla extract
- 1 tbsp. poppyseeds
Toppings
- coconut yogurt mixed with turmeric
- blueberries
Preparation
Mix all ingredients except toppings in a bowl until smooth batter.
Heat some oil in a frying pan and cook two pancakes at a time for about 3 minutes per side.
Mix the yogurt with turmeric.
Layer the pancakes with yogurt and top with blueberries.
Serve and enjoy.
