Lemon Poppyseed Protein Pancakes

Ingredients

  • 1 banana, mashed
  • 1 cup buckwheat flour
  • 1 scoop vegan protein
  • 1 cup almond milk
  • Juice of 1/2 lemon
  • 2 tsp. baking powder
  • 1/2 tsp. vanilla extract
  • 1 tbsp. poppyseeds

Toppings

  • coconut yogurt mixed with turmeric
  • blueberries

Preparation

  1. Mix all ingredients except toppings in a bowl until smooth batter.

  2. Heat some oil in a frying pan and cook two pancakes at a time for about 3 minutes per side.

  3. Mix the yogurt with turmeric.

  4. Layer the pancakes with yogurt and top with blueberries.

  5. Serve and enjoy.
