Blue Pancakes with Peanut Butter
Ingredients
- 1 tablespoon ground flax-seeds
- 3 tablespoons water
- 120 grams all-purpose flour
- pinch of salt
- 200 ml coconut milk
- 60 ml water
- 2 tablespoons melted dairy-free butter
- 2 tablespoons coconut sugar or to taste
- 2 tablespoons blue spirulina powder
- smooth melted peanut butter, for serving
Preparation
Mix ground flax-seeds and water together in a small bowl and let it sit for 10 minutes until the mixture becomes gel.
In a bowl combine flour and salt together.
In a separate bowl combine coconut milk and 60 ml of water.
Add in flax-seed mixture, melted butter, sugar and spirulina, mix to combine.
Add in flour and mix until just combined.
Pour about 2 tablespoons of batter per pancake onto preheated lightly greased pan.
Cook 1 to 2 minutes on each side or until golden brown.
Serve warm with melted peanut butter and toppings of your choice.
