Carrot Cake Baked Oats with Cream Cheese Frosting
Ingredients
- 2 1/2 cups @bakeryonmain rolled oats
- 1/4 cup ground flaxseed
- 1/3 cup maple syrup
- 1 1/2 tsp baking powder
- 2 tsp cinnamon
- 1 tsp ginger
- 1/4 tsp nutmeg
- 1/4 cup chopped walnuts or pecans
- 1/4 tsp salt
- 2 tbsp vegan butter
- 1 1/2 cup plant milk
- 1 1/2 cup grated carrot
Cream Cheese Frosting
- 8 oz vegan cream cheese
- 1/2 cup vegan greek yogurt*
- 1/4 cup maple syrup
- 1 tsp vanilla extract
Preparation
Preheat the oven to 350°F (175°C) and grease a baking dish.
In a large bowl, combine the rolled oats, ground flaxseed, baking powder, cinnamon, ginger, nutmeg, chopped nuts, and salt.
In a saucepan, melt the vegan butter over low heat. Add the plant milk, grated carrot, and maple syrup. Stir until well combined.
Pour the wet mixture into the dry mixture and mix until everything is evenly incorporated.
Transfer the mixture to the prepared baking dish and spread it out evenly.
Bake in the preheated oven for about 25-30 minutes, or until the oats are set and the top is golden brown.
While the baked oats are baking, prepare the cream cheese frosting. In a bowl, combine the vegan cream cheese, vegan greek yogurt, maple syrup, and vanilla extract. Mix until smooth and creamy.
Once the baked oats are done, remove from the oven and let cool slightly.
Serve the baked oats with a generous dollop of cream cheese frosting on top.
