Chocolate Cherry Granola
Ingredients
- 3 cups rolled oats (gluten-free if needed)
- 1 cup walnuts, chopped
- 1/2 cup sunflower seeds
- 1/2 cup pepitas
- 2 tbsp chia seeds
- 1/3 cup cocoa powder
- 1 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup maple syrup
- 1/4 cup tahini, smooth and runny
- 1 tsp vanilla extract
- 1/2 cup vegan dark chocolate chunks
- 1/2 cup dried cherries
Preparation
Preheat oven to 325°F (165°C) and line 1-2 baking trays with parchment paper.
In a large bowl, combine oats, walnuts, sunflower seeds, pepitas, chia seeds, cocoa powder, cinnamon, and salt.
Add maple syrup, tahini, and vanilla to the dry ingredients. Mix well to coat all the oats evenly.
Spread the mixture evenly in a thin layer on the prepared baking tray(s).
Bake in the preheated oven for 20-23 minutes, stirring the granola halfway through the baking time.
Remove the tray from the oven and let the granola cool for at least 10 minutes or until completely cooled.
Stir in the vegan dark chocolate chunks and dried cherries until well mixed.
Store the chocolate cherry granola in an airtight container and enjoy.
