Vegan Paleo Carrot Cake Bars

Ingredients

Base

  • 10 medjool dates
  • 1 cup walnuts
  • 1 cup almonds
  • 1/2 cup shredded carrot
  • 2 tablespoons melted coconut oil
  • 2 teaspoons cinnamon
  • pinch of salt

Frosting

  • 8 ounces vegan cream cheese
  • 1/4 teaspoon cinnamon
  • 5 tablespoons maple syrup
  • 1 1/2 teaspoons vanilla extract

Preparation

  1. Add dates, nuts, carrots, coconut oil, cinnamon, and salt to a food processor and process until fine crumbs form.

  2. Pour the mixture into a lined 8x8 pan and press it down.

  3. Chill in the refrigerator for 10 minutes.

  4. Beat together the cream cheese, cinnamon, maple syrup, and vanilla extract.

  5. Spread the cream cheese mixture onto the chilled base.

  6. Chill for 30 minutes to set.

  7. Cut into desired sizes.

  8. Enjoy.
